In general, tuna or egg salad on a cracker will receive the berachah of the cracker, and one would recite Mezonos on both together.
This is similar to a tuna sandwich, which is hamotzi, and different from the case of herring, where one’s intention is to eat the herring and the cracker only serves to facilitate the eating of the herring.
The berachah acharonah will likewise be Al Hamichyah alone.
