Hello. If one made a mezonos on a piece of cake and didnt eat a kezait or ate a kezait but not within the shiur of the zman and then he doesnt eat or drink for over 72 minutes. He now wants to eat another bite of cake. Does he make a new bracha of mezonos or not?

Answer:

If he clearly “finished eating” his original cake, and didn’t intend to eat more, another bite of cake will require a new berachah.

However, if he is “snacking on cake” during the morning or while working on something, so that the original berachah is made with the intention of eating more late, no new beracha is made – this provided the cake is not a “new cake” that was not planned.
