Answer:
Yoshon refers to a grain product which uses grains from before Pesach. By passing over Pesach, the prohibition of Chodosh is permitted, making Yoshon grains. Some are lenient based on various considerations for grains from outside of Israel, and use grains which may be from after Pesach.
