If I am not eating any meals at home and do not plan on using them, do I need to cover my kitchen counters? If yes is a thin plastic cover enough or do I need to do a double covering? Do I have to kasher my sink if i will only use it to wash hands after bathroom etc? Thanks

You don’t have to, but it is a good idesa to cover the counters anyways, because yo might put some food down on it inadvertantly. One cover will definitely suffice. If you are only using the sink to washyour hands you done have to kasher it.
