The reason that we use different utensils for milk and meat is because when a utensil is used with hot or spicy food, it absorbs its taste. That taste can then get transferred to food of the opposite type. For example, if I stick a fork into a hot piece of meat, the fork now has taste of the meat absorbed inside it. If I will then use this fork with a hot cheesy lasagna, it will now get the meat taste from the fork. Therefore we keep two separate sets of dishes, so this will not happen.
