Answer:

The point of eating the honey is that it is sweet, and it is a siman that we should have a sweet year, common practice is to use bee honey, but I don’t know if that is specific or just because we don’t really have date honey. Technically a person can also use sugar (if they don’t have honey), because the point is that it should be sweet.
