Practically speaking, is there a way I can go about figuring out (or even estimate) how much of a tortilla/wrap is a kezayis?

Answer:
It is approximately the amount that would fill a one ounce size shnapps cup, when it is pressed in well, or the size of an Israeli match box. There is a sefer in English by R' P. Bodner shlit"a called "The halachos of K'zayis". He has a lot of pictures of different food items and practically what size of each of is a k'zayis.
