Regarding your specific hobby, it sounds to me that building an outdoor couch is not something that most people are capable of doing ,and it needs a carpenters skills, ( and you must be pretty talented) therefore tit seems that it is considered a “maaseh uman” and should not be done on Chol Hamoed.
