If non kosher meat (cold) brushed against a sealed kosher product, and the outside of the kosher product (a plastic new container of sealed hummus and a plastic container of sealed new iced coffee), is anything other than wiping down the outside required to enjoy the hummus and coffee?

You are correct, there is no need to do anything else except for wiping it off, to make sure that there is no grease etc. from the meat, and it is fine.
