What’s the best way to make a contract “more official” instead of just having the 2 parties sign it (both parties are located in different locations)? Signing it in from of witnesses? Something else?

From a halachic standpoint, the fact that the two parties signed the contract, is binding, and if the person agrees that he signed the contract it considered like it was signed in front of two witnesses,“הודאת בעל דין כמאה עדים דמי” . The only benefit that you would have if there would be witnesses present is if you are afraid that he might deny the fact that he signed the contract, otherwise his signature is fully binding.
