Is it allowed, lechatchila, to put a hot bowl of kosher food down on a non-kosher countertop, if it is dry (but will condensate)?

It isn’t l’chatchila. The reason is even without the aspect of the condensation, it is controversial if absorbed taste goes from one vessel to another without liquid. Therefore, although b’dieved we will not say that the taste went over, however l’chatchila we are careful about this.
