I hold 72 minutes. The shul I daven in does not. By the time Shabbos is over for me, the help has already cleaned up from shalosh seudos. I would be happy to eat the leftovers during the week. Is there a way for me to provide the help with plastic bags and request that they put the leftovers in them and leave them on the table so that, as I am leaving the shul after 72 minutes, I can pick up the food and take it with me. I don't think that there is a way to arrange for this before Shabbos because I have no way of knowing who will be cleaning up.

You may give the help the plastic bags that you need in order for him to save the food for you. It is not an issue of hachana, since there is no melacha involved and you are giving him the bags in order to prevent a loss of the food, because otherwise, the food will be thrown in the garbage. Therefore it is permitted.
