This is very kind and considerate of you, to be sensitive to the religious needs, and sensitivities of the customers to the store you work in.
The first suggestion, I can give you is to dress modestly, as this will make the religious male customers uncomfortable. Another suggestion would be that when it is holiday time, tell them to have a happy holiday, or towards the end of the week tell them to have a good Shabbos. They will appreciate that.
Regarding handing them change, if the customer is a hasidic looking male, just place the change and the receipt in the counter, and they will take it.
