In general, Einkorn matzohs are the type of wheat that they made matzohs with for all the generations, and is fine to use for Pesach. Badatz, and other hechsherim sell matzohs made of einkorn flour. However, like all matzohs for Pesach one needs to make sure that it has a reliable hechsher, including that it was watched from the time it was harvested, and that it didn’t rain on them, etc.
