Usually I eat matzos on Shabbos and Yom Tov for health and dietary reasons, but over the years I have had a number of tooth extractions so it is difficult for me to eat the kazayis quickly immediately after hamotzi, so the best option for me is to first soak the matzos in water for a few minutes until they are softer, but by then the main time limit for eating the kazayis had passed.
So I thought to prepare matzos soaked in water before kiddush, so that when I wash it would be ready, but then the problem is not eating the first kazayis from the lechem mishnah matzos that I made hamotzi on.
So am I permitted to eat a bite of matzoh after hamotzi, and then first soak those matzos from lechem mishnah in water for around 5 minutes, and then eat the entire kazayis properly, or is it required to eat the kazayis immediately after hamotzi without exception.

Yes you can. Although there is a certain preference to eat the first k'zayis immediately after saying the bracha and even before talking, halachically as long as you swallowed a little bit, you are fine. Just make sure to eat a kzayis or bread matzoh, etc., within 4-5 minutes, at any time during the meal, and you may bentch.
