If I don't offer my service on Sundays and a client wants the job done on Sunday, can I charge him an extra emergency fee? Similarly, if my normal turnaround time is 2 days and the client wants the job done in one day, can I charge him a rush fee?

This is not ribbis, as ribbis is only if one charges extra for the the other person having your money. Charging extra for working over time or off hours is a service charge, not ribis.
