Hi Rabbi,
When I am davening shemona esrei, I sometimes find that I stutter a little when at the end of the bracha, and I am unsure if I actually said it or not. In this case I skip it and move on to the next bracha, because I am following safek brachos lihakel, but is this the correct approach?

This seems to be the correct approach, if you are pretty sure that you said the end of the bracha, and you are going further, in order not to get bogged down with nerves. You are doing correct.
