Question:
When you are in a hotel in a foreign country, one of the only options for cooking is the hotel iron and ironing board.
Can you make them kosher? Is there a way to "kasher" them?
Is it reasonable to assume that no one has used the ironing board and ironing machine for cooking before?

If the iron was rendered treif by placing it directly on non-Kosher food, there is no practical way to kasher it.
Regarding the likelihood of this happening, I can’t answer you for certain, as I don’t know the customs of different places in the world. However, on the surface, it doesn’t seem like something people normally do.
