Leaving open bottles of non-mevushal wine can be an issue, but there are some possible permitting factors. Here are some of the rules. If the bottle was double-sealed, or even if the wine had a cork that was never removed, these will serve as a valid seal, and we can rely on the fact that the gentile didn’t drink from the wine. Otherwise, if the bottle was already opened, it would need two factors to permit the wine. First, the gentile has to have been told that they may not touch the wine. Second, there has to be someone who comes in and out of the area where the wine is, with a frequency of about every 18 minutes. This is in order for the gentile to be afraid of touching the wine.
