When I was a bachur about ten years ago, someone from a kiruv organization came around with prizes of various values. Whoever wanted could take a prize or two, and that was it. Keep in mind I only stole something worth $200, but it was like any collecting organization today, where you only get the prize if you bring in more than the prize's worth, in this case $500

Before answering, it is a bit negligent on the part of the kiruv organizations to give out the prizes and expect that they will collect the money afterward. However, post facto, you took the prize with the understanding that you would collect $500. Even if you have not yet fulfilled your obligation, you still have to do so. Therefore, what you owe the organization is $500, but you can collect the money for the organization.
