Question:

Karpas: what does this word actually mean and where does it come from?

Answer:

The Rambam mentions “Karpas of rivers” (Forbidden foods Chap. 16), and it appears that it is a type of vegetable.

Some have suggested, based on botanical textbooks, that it is parsley.

Best wishes.
