Although many rishonim write that one whole cashew is enough, because it is a “beriah,” this matter is disputed among rishonim, and the Shulchan Aruch therefore recommends that one should not eat a whole nut (or other whole item) when one is not eating a shiur kezayis, in order to avoid a safek of berachos.
Depending on the size of the cashews, I think six or seven will certainly be enough for a borei nefashos, and it is possible that even five or so is enough. The volume of a kezayis is approximately the volume of a small matchbox.
