In prayer the blessing (standing up) section, I’ve noticed a star * indicator near a few brachos. Does this mean that for a women a few wordings should be changed? For instance, for not creating me to be a gentile/ for not creating me to be a slave, etc. Thank you.

I think that you are referring to the stars in the Artscroll siddur. The stars refers you to footnotes on the bottom of the page that contain insights into the berachos.
