Checking Cabbage Leaves

Green cabbage – For cooking or stuffing

A.Check cabbage head for holes. If any are found, remove the affected area.
B.Freeze for at least 48 hours. This will cause the folds of the leaves to get open and the dead thrips to wash off easily.
C.Thaw partially and separate the leaves.
D.Rinse well each leaf on both sides (front and back) under a strong stream of running water while opening all the folds.

After following these instructions, it is best to check the more external leaves for bugs. There is no need to check the internal leaves.

The reason for this is that it is rare to find bugs in the internal leaves, and common for external leaves. Therefore, although the process above should remove bugs, it remains best to check the external leaves and ensure that none remain.

However, there is no obligation to check the leaves. Note that for salad the instructions do mentions soaking in soap water, and the instructions you mentioned are specifically for cooking.
