I would like to use three sinks for Parve, dairy and meat. However, one is a single-bowl sink and the other is a double-bowl sink. Please advise if it is best to use the double sink for parve and dairy or for parve and meat.
This is not a halachic question, rather a practical one. From your question you seem to have decided that pareve will be a double bowl sink, and you want to know if the meaty or dairy should be the other large sink. It depends on which type yoiu have more pots and dishes. Many people have more meaty pots than dairy ones, therefore if you are this way also tyhen you would want the meaty one for the secoind large sink.
