Can I take off challah, wrap it and freeze it and then burn a whole batch of these challahs once a month or so or is the mitzvah to burn or dispose of it right away?

It is preferable to either burn it or wrap it well and dispose of it right away. The reason being that keeping the challah around can also lead to mistakes. This is why there is a halacha that one should not leave their teruma around, because it can lead to mistakes and problems. There is an idea brought in one of the poskim, that it is permitted to place it in a bag, that is sealed well and marked well, that it is challah meant to be burned, so that no one will mistake it for some type of food that may be eaten, i.e. kneidlach, frozen gefilte fish, etc). However. others do not differentiate.
