We used a margarine that was not Parve to make fried chicken, we did not eat the chicken but later someone told us that it would have been OK to eat it because the margarine was only 1% dairy

If it could be verified that there was in fact only 1% dairy, the ratio of 1/100 would in fact be batel and the margarine would not have dairy status according to the letter of the law. However, the numbers need to be verified to be exactly accurate, as even less then 2% is already not batel bshishim [1/60]. In any event this would be forbidden to do לחתכילה even if there is bitul, because of the prohibition of intentionally nullifying forbidden foods in other foods.
