Hello,
Yes, there are a number of ways to use the leftover food from the bris even during the nine days.
First of all the side dishes, although we won’t eat them with milk, but they aren’t fleishig regarding the nine days, and may be eaten.
Secondly, the mother of the baby is considered a choleh, and she can eat meat until the seventh of av. If she is feeling weak, she can eat meat until the seuda hamafsekes.
Alternatively, the leftover meat or chicken can be eaten on Shabbos, as we are allowed to eat meat on Shabbos.

I have a friend who only found out that the baby was too yellow when the Mohel opened the diaper by the bris and they froze most of the the food from the bris. It turned out for the best because they had Shabbos food for the next month or two and the mother didn’t have to cook much.
