Regarding humane mice trapping (where the mice are caught in a cage and released), is there an issue if the traps are still set over Shabbat and the mice could be caught on Shabbat? What is the halacha to remove mice humanely if this is not the way.

Answer:
We are allowed to set up the traps before Shabbos, even if the mouse gets trapped on Shabbos. As a side point although we should not trap mice in a way that causes them pain and prolonged suffering such as a glue trap, halachically it is permitted to use a trap to kill the mice. This is because we are allowed to kill animals in order to prevent human pain.
