Cut esrog

Question:

My son started to cut up an esrog (dvar charif) with a fleishing knive on top of a milchig table- there might have even been some dairy ice cream below the esrog. However, I stopped him before he cut through the esrog and the knife could have contact with the table. I then assumed the knife was okay since it didn't touch the table, but I'm second-guessing myself and am double-checking with you.
